Zucchini Noodle Bolognese

A hearty bolognese sauce served over spiralized zucchini noodles. All the comfort of pasta night with dramatically fewer carbs.

Ingredients

  • 4 medium zucchini, spiralized
  • 500 g ground beef (lean)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 400 g canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 40 g Parmesan, grated

Instructions

    Heat olive oil in a large pan. Sauté onion and garlic until fragrant (2 min).

    Add ground beef, break it up, and cook until browned (5–7 min).

    Add crushed tomatoes, tomato paste, basil, and oregano. Simmer 20 minutes.

    Meanwhile, spiralize zucchini and sauté in a separate pan for 2–3 minutes to soften slightly.

    Serve sauce over zucchini noodles, topped with Parmesan.

Diabetes tips

Compared to regular pasta, this dish is much lower in carbs. Use your usual dosing method agreed with your care team — the fat from beef will slow absorption, so a standard bolus timing should work well. Note it in your journal!
