Vanilla Panna Cotta with Red Berry Coulis

A silky Italian-inspired chilled dessert made with cream, vanilla, and set with gelatin — topped with a vibrant red berry coulis. Elegant, low-carb, and diabetes-friendly.

Ingredients

  • 100 ml heavy cream (30% fat)
  • 25 ml whole milk
  • 0.75 gelatin sheets
  • 0.25 tsp vanilla extract
  • 5 g erythritol (or sweetener of choice)
  • 37.5 g mixed red berries (strawberries + raspberries)
  • 0.25 tbsp lemon juice

Instructions

    Soak the gelatin sheets in cold water for 5 minutes until softened.

    Combine the heavy cream, whole milk, erythritol, and vanilla extract in a small saucepan over medium heat. Stir until the sweetener dissolves. Do not boil.

    Remove from heat. Squeeze excess water from the gelatin sheets and stir them into the warm cream until fully dissolved.

    Pour the mixture into 4 ramekins or glasses. Let cool to room temperature, then refrigerate for at least 4 hours (or overnight) until set.

    For the coulis: blend the mixed berries with lemon juice and a pinch of sweetener if desired. Pass through a fine sieve for a smooth texture.

    To serve, run a knife around the edge of each ramekin and unmould onto a plate, or serve directly in the glass. Spoon the berry coulis on top.

Diabetes tips

The high fat content of the cream significantly slows glucose absorption, making this a gentle dessert for blood sugar. Carbs come mainly from the berries — use your usual dosing method agreed with your care team to adjust your bolus accordingly, and log this dessert in your journal to track your personal response.
