
The Hawaiian bowl that conquered the world: sushi-grade tuna, creamy avocado, edamame, and crispy cucumber on seasoned sushi rice with a sesame-soy drizzle. Fresh, satisfying, and surprisingly easy to make at home.
Rinse sushi rice under cold water until the water runs clear (about 3–4 rinses). Cook in a rice cooker or pot using a 1:1.1 water ratio. Let steam for 10 minutes after cooking.
Warm the rice vinegar, sugar, and salt together until dissolved. Gently fold the seasoning into the hot rice with a wooden spoon, fanning to cool it to room temperature.
While the rice cools, dice the tuna into 2cm cubes. Slice the avocado and cucumber. Thaw or heat the edamame if needed.
In a small bowl, whisk together the soy sauce, sesame oil, and sriracha to make the dressing.
Divide the cooled rice among 4 bowls. Arrange the tuna, avocado, cucumber, and edamame on top.
Drizzle with the sesame-soy dressing. Garnish with green onions, sesame seeds, and pickled ginger. Serve wasabi on the side.
Carbs come mainly from sushi rice (GI 80–90, one of the highest-GI foods). Use your usual dosing method agreed with your care team and inject 15–20 minutes before the meal. The vinegar in the rice slightly lowers the glycemic response but the impact remains high. Log this meal in your journal to track your post-meal pattern.
