Tuna, Avocado & Tomato Bowl (No-Cook)

A fresh, filling no-cook lunch bowl ready in 5 minutes — canned tuna, creamy avocado, cherry tomatoes, and cucumber with a lemon-olive oil drizzle. Very low in carbs and high in protein.

Ingredients

  • 240 g canned tuna in water, drained
  • 1 ripe avocado (1 medium)
  • 200 g cherry tomatoes, halved
  • 100 g cucumber, diced
  • 40 g red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice (½ lemon)
  • 1 tbsp fresh chives or parsley
  • 1 pinch salt and pepper

Instructions

    Drain and flake the tuna into large chunks. Halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.

    Halve the avocado, remove the stone, and slice or dice the flesh.

    Divide everything between 2 bowls: arrange tuna, avocado, cherry tomatoes, cucumber, and onion.

    Drizzle with olive oil and lemon juice. Season with salt and pepper, scatter fresh herbs. Serve immediately.

Diabetes tips

Carbs come mainly from avocado and vegetables, with good fiber content. Enter the total carbs into your usual dosing method — most people need little or no bolus for this meal, but always verify with your ratio. The healthy fats from avocado slow glucose absorption further. Log this meal to confirm your personal response.
