
All the convivial joy of a classic raclette night — melted cheese, charcuterie, cornichons — without the carb overload. Zucchini, mushrooms, bell peppers and cherry tomatoes replace the potatoes, delivering the same festive spirit with about a quarter of the carbs of a classic potato raclette.
Toss the zucchini, mushrooms, bell pepper, and cherry tomatoes with olive oil, thyme, and a pinch of black pepper.
Preheat a griddle pan or oven to 200°C (400°F). Grill or roast the zucchini and mushrooms for 8–10 minutes, turning once, until golden and tender. Add the bell pepper and cherry tomatoes for the last 5 minutes — slightly charred but still holding their shape.
Arrange the charcuterie — ham, bresaola, and salami — on a large platter at room temperature.
Heat the raclette machine (or oven grill). Place raclette cheese slices in the individual coupelles. Melt for 2–3 minutes until bubbling.
Serve the hot grilled vegetables alongside the charcuterie and cornichons. Pour the melted raclette cheese directly over your plate.
Repeat melting rounds as needed — that is the raclette spirit! Season to taste with extra black pepper.
Carbs come from grilled vegetables — far fewer than a classic potato raclette. However, raclette cheese is very high in fat, which significantly slows gastric emptying — glucose may rise gradually over 2–4 hours rather than spiking immediately. Use your usual dosing method agreed with your care team before eating, then monitor for a delayed rise. Log your response in your journal over a few raclette nights to refine your bolus timing.
