Salmon with Roasted Vegetables

Baked salmon fillet with a colorful medley of roasted Mediterranean vegetables. A balanced, nutrient-dense meal that's easy to prepare.

Ingredients

  • 4 (150g each) salmon fillets
  • 2 zucchini, cubed
  • 2 bell peppers, cubed
  • 1 red onion, cut in wedges
  • 200 g cherry tomatoes
  • 3 tbsp olive oil
  • 1 lemon
  • 1 tsp dried thyme
  • 4 garlic cloves, whole

Instructions

    Preheat oven to 200°C (400°F).

    Toss vegetables with 2 tbsp olive oil, thyme, garlic, salt, and pepper on a large baking sheet.

    Roast for 15 minutes.

    Place salmon fillets on top of vegetables, drizzle with remaining oil and lemon juice.

    Return to oven for 10–12 minutes until salmon is cooked through.

Diabetes tips

Carbs come mostly from vegetables (low GI). Use your usual dosing method agreed with your care team and consider a 15-minute pre-bolus. The omega-3 fats from salmon are anti-inflammatory and slow glucose absorption.
