Red Lentil Dahl

A warming, deeply spiced Indian dahl made with red lentils, light coconut milk, and canned tomatoes — ready in 40 minutes and perfect for batch cooking. Naturally vegan, gluten-free, and incredibly budget-friendly.

Ingredients

  • 250 g dry red lentils
  • 400 ml light coconut milk (canned)
  • 400 g canned diced tomatoes
  • 1 large yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 cm piece fresh ginger, grated
  • 400 ml vegetable broth
  • 1 tbsp coconut oil or olive oil
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/4 tsp chili flakes (optional)
  • 100 g fresh spinach (optional)
  • 1 tbsp lime juice
  • 1 handful fresh cilantro, to serve
  • to taste salt and pepper

Instructions

    Rinse the red lentils thoroughly under cold water until the water runs clear. Set aside.

    Heat the oil in a large pot over medium heat. Add the diced onion and cook for 5–6 minutes until soft and golden.

    Add the minced garlic and grated ginger. Cook for 1–2 minutes, stirring constantly, until fragrant.

    Add the cumin, turmeric, ground coriander, garam masala, and chili flakes. Stir into the onion mixture and toast the spices for 30 seconds.

    Add the rinsed lentils, canned tomatoes, coconut milk, and vegetable broth. Stir well to combine. Bring to a boil, then reduce heat to low.

    Simmer uncovered for 20–25 minutes, stirring occasionally, until the lentils are completely soft and the dahl has thickened to your liking. Add a splash of water or broth if it gets too thick.

    If using spinach, stir it in during the last 2 minutes of cooking until just wilted.

    Remove from heat. Stir in lime juice and season generously with salt and pepper. Serve topped with fresh cilantro. Pairs well with cauliflower rice for an extra low-carb meal.

Diabetes tips

Red lentils have one of the lowest glycemic indexes of any starchy food (GI ~25), meaning glucose rises very gradually after this meal. The high fiber content further slows absorption. Use your usual dosing method agreed with your care team to dose — and log this meal to observe your personal response over time.
