Quick Lentil & Feta Salad

A hearty lentil salad with crumbled feta, cherry tomatoes, cucumber, and spinach — dressed with a light balsamic vinaigrette. Ready in 10 minutes using pre-cooked lentils. With a GI of ~28, lentils are one of the best carb sources for diabetes.

Ingredients

  • 400 g cooked green lentils (pre-cooked or canned)
  • 100 g feta cheese, crumbled
  • 200 g cherry tomatoes, halved
  • 100 g cucumber, diced
  • 60 g red onion, thinly sliced
  • 80 g baby spinach or rocket
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 pinch salt and pepper

Instructions

    If using canned lentils, rinse and drain. For pre-cooked vacuum-packed lentils, use as-is or warm briefly in the microwave for 2 minutes.

    Halve cherry tomatoes, dice cucumber, and thinly slice red onion.

    In a small bowl, whisk olive oil, balsamic vinegar, mustard, salt, and pepper to make the dressing.

    In a large bowl, combine lentils, cherry tomatoes, cucumber, onion, and spinach. Pour the dressing over and toss well.

    Top with crumbled feta. Serve at room temperature or slightly warm.

Diabetes tips

Carbs come from lentils (GI ~28) — one of the slowest-digesting carb sources available. The blood sugar rise is gradual and prolonged. Use your usual dosing method agreed with your care team. Some people find they need a slightly delayed bolus for high-legume meals. Log this meal to learn your personal pattern.
