Provençal Ratatouille

A classic Provençal vegetable stew made with eggplant, zucchini, bell peppers, and tomatoes — low-carb, naturally vegan, and ideal for batch cooking. Rich in fiber and antioxidants with a gentle glycemic impact.

Ingredients

  • 1 medium (~300g) eggplant, diced
  • 2 medium (~400g) zucchini, sliced
  • 2 medium (~300g) red bell peppers, diced
  • 400 g canned crushed tomatoes
  • 2 medium onions, diced
  • 3 garlic cloves, minced
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 6 fresh basil leaves
  • to taste salt and pepper

Instructions

    Dice the eggplant into 2 cm cubes and sprinkle with a pinch of salt. Let it sit for 10 minutes, then pat dry with paper towels. This removes bitterness.

    Heat 2 tbsp of olive oil in a large heavy-bottomed pot or Dutch oven over medium heat. Add the diced onions and cook for 5 minutes until softened and translucent.

    Add the minced garlic, diced bell peppers, and eggplant. Cook for 8 minutes, stirring occasionally, until the vegetables begin to soften.

    Add the sliced zucchini, canned crushed tomatoes, thyme, rosemary, salt, and pepper. Stir to combine.

    Cover and simmer over low heat for 25–30 minutes, stirring every 10 minutes, until all vegetables are very tender and the sauce has thickened.

    Adjust seasoning. Drizzle with the remaining 1 tbsp olive oil and scatter the fresh basil leaves on top before serving.

    Serve warm as a side dish or store in the fridge for up to 4 days. Ratatouille always tastes better the next day.

Diabetes tips

Carbs come entirely from low-GI vegetables — no rapid glucose spikes. The fiber and olive oil slow digestion further. Use your usual dosing method agreed with your care team to dose accurately for this meal, and log it in your journal to observe your personal response. Ratatouille pairs well with a lean protein (chicken, eggs, fish) to form a complete plate.
