Ingredients

  • 150 g frozen mixed berries (strawberries, blueberries, raspberries)
  • 30 g whey protein powder, vanilla
  • 100 g Greek yogurt, 0% fat
  • 60 ml unsweetened almond milk
  • 30 g banana, thinly sliced (topping)
  • 12 g chia seeds (topping)
  • 15 g whole almonds (topping)
  • 30 g fresh blueberries (topping)

Instructions

  1. 1

Add the frozen mixed berries, whey protein powder, Greek yogurt, and almond milk to a high-speed blender.

  2. 2

Blend on high for 30–45 seconds until smooth and thick. The mixture should be spoonable, not drinkable — add a splash more almond milk only if needed.

  3. 3

    Divide evenly between two bowls.

  4. 4

Top each bowl with banana slices, chia seeds, almonds, and fresh blueberries.

  5. 5

Serve immediately while the base is still cold and thick.

Diabetes tips

Carbs come mainly from berries and banana — moderate GI foods that cause a steady rather than sharp rise. Use your usual dosing method agreed with your care team to determine your bolus before eating. The whey protein and Greek yogurt significantly slow glucose absorption; expect a gradual rise starting 20–30 minutes after the meal. Monitor for 2 hours and log the pattern in your journal.
