Protein Açaí Bowl

A vibrant deep-purple bowl built on açaí powder and Greek yogurt — loaded with antioxidants, protein, and fiber. MODERATE glycemic impact with carbs coming mainly from granola, banana, and berries: keep granola to one portion and watch the banana.

Ingredients

  • 20 g açaí powder (freeze-dried, unsweetened)
  • 200 g plain full-fat Greek yogurt
  • 60 g banana (½ medium)
  • 40 g low-sugar granola
  • 80 g mixed berries (fresh or frozen, thawed)
  • 15 g chia seeds
  • 8 g unsweetened coconut flakes
  • 5 g honey or erythritol, to taste

Instructions

    In a small bowl, mix the açaí powder with 2 tablespoons of cold water, stirring vigorously to form a smooth paste.

    Add the Greek yogurt to the açaí paste. Stir until fully combined and evenly deep purple.

    Taste the base and add honey or erythritol if you'd like it sweeter.

    Divide the açaí-yogurt base between two bowls.

    Slice the banana. Arrange banana slices, granola, mixed berries, chia seeds, and coconut flakes over each bowl.

    Serve immediately — the granola softens quickly.

Diabetes tips

High fiber content significantly reduces the net carb impact. Açaí polyphenols have anti-inflammatory properties and may modestly improve insulin sensitivity. Banana and granola drive the glycemic curve: pre-bolus 10–15 minutes before eating. Log this bowl in your journal.
