Post-Workout Recovery Bowl (Rice, Chicken & Veggies)

The classic recovery trio — basmati rice (GI ~58), grilled chicken, and colourful vegetables seasoned with tamari and sesame oil. High in protein with moderate carbs from basmati rice, it's the optimal meal to eat within 30–60 minutes after exercise.

Ingredients

  • 80 g basmati rice (dry)
  • 350 g chicken breast
  • 200 g broccoli florets
  • 100 g carrots, sliced
  • 2 tbsp tamari (gluten-free soy sauce)
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • to taste salt and black pepper

Instructions

    Rinse the basmati rice. Combine with 160 ml (2/3 cup) water in a small saucepan. Bring to a boil, reduce to low heat, cover, and cook for 12 minutes. Remove from heat and steam for 5 minutes.

    Cut the chicken breast into strips about 1 cm thick. Season with salt and pepper.

    Heat half the sesame oil in a non-stick skillet or wok over high heat. Cook the chicken strips 3–4 minutes per side until golden and cooked through. Set aside.

    In the same pan, stir-fry the broccoli florets and carrot slices with a splash of water for 3–4 minutes until tender-crisp.

    Add the minced garlic and grated ginger, stir-fry for 30 seconds. Drizzle with tamari and toss to coat.

    Divide the rice between 2 bowls. Top with the chicken and stir-fried vegetables, then drizzle with the remaining sesame oil.

Diabetes tips

Carbs come from basmati rice (GI ~58) while the chicken provides high-quality protein — this bowl optimally refuels glycogen stores post-exercise. Post-workout insulin sensitivity is often elevated — use your usual dosing method agreed with your care team and ask your care team about adjusting your correction factor after activity. The high protein content may cause a gradual glycemic rise 2–3 hours later; log this meal in your journal to track the pattern.
