Portobello Mushroom Burger (Bunless)

A juicy beef burger where two large portobello mushroom caps replace the bun — drastically lower in carbs than a classic bun burger. Topped with melted cheddar, crisp lettuce, and fresh tomato, this satisfying keto-friendly dinner delivers bold burger flavor without the blood sugar spike.

Ingredients

  • 4 caps large portobello mushroom caps (2 per burger)
  • 300 g ground beef, 80% lean
  • 2 slices cheddar cheese, sliced (1 slice per burger)
  • 2 leaves romaine or butter lettuce leaves
  • 2 slices tomato, sliced (1 slice per burger)
  • 20 g red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

    Remove the stems from the portobello caps and wipe clean with a damp paper towel. Brush both sides with olive oil and season with salt and pepper.

    In a bowl, combine the ground beef, garlic powder, Worcestershire sauce, 1/4 tsp salt, and a pinch of pepper. Mix gently and form into 2 patties slightly wider than the mushroom caps (they will shrink during cooking).

    Heat a grill pan or skillet over medium-high heat. Cook the portobello caps gill-side down for 3–4 minutes, then flip and cook 2–3 minutes more until tender and slightly charred. Remove and set aside gill-side up.

    In the same pan, cook the beef patties over medium-high heat for 3–4 minutes per side until cooked through (internal temp 71°C / 160°F). In the last minute, place a cheddar slice on each patty and cover the pan to melt.

    Assemble each burger: place a portobello cap gill-side up as the base, layer with a lettuce leaf, the cheesy patty, tomato slice, and red onion. Top with the second portobello cap gill-side down.

    Serve immediately. Optionally add sugar-free mustard or a spoonful of mashed avocado for extra richness without significant carbs.

Diabetes tips

Carbs come mainly from the portobello caps and vegetables — far fewer than a classic bun burger. Still dose insulin: use your usual dosing method agreed with your care team to account for this lower carb load. The beef patty's fat and protein will slow glucose absorption, so watch for a delayed rise if you are sensitive to high-fat meals. Log your meal and post-meal readings in your journal.
