A whole-grain tortilla (GI ~45 vs. ~70 for white) holds grilled chicken, creamy avocado, crisp cucumber, cherry tomatoes, and a quick Greek yogurt herb sauce. Carbs come mainly from the tortilla, with the rest being mostly protein — easy to prep the night before and grab in the morning. Look for stone-ground or 100% whole-wheat tortillas (Mission Whole Wheat, Ezekiel, or similar) for the best glycemic profile.

Make the sauce: in a small bowl, mix the Greek yogurt with lemon juice, chopped chives (or parsley), a pinch of paprika, salt, and pepper. Taste and adjust seasoning. (Can be made the night before and refrigerated.)
Warm the whole-grain tortillas in a dry skillet over medium heat for 30 seconds per side, or wrap them in a damp paper towel and microwave for 20 seconds. This makes them pliable and easier to roll.
Lay each tortilla flat. Spread 1 tablespoon of the Greek yogurt sauce in the center, leaving a 2 cm / 1-inch border on each side.
Layer the fillings: place one lettuce leaf on top of the sauce, then add one quarter of the sliced chicken (100g / 3.5 oz), 2 halved cherry tomatoes, a few cucumber slices, and one quarter of the avocado slices.
Fold in the sides of the tortilla, then roll tightly from the bottom up, enclosing the filling. Slice in half on a diagonal.
To pack ahead: wrap each assembled wrap tightly in parchment paper or beeswax wrap (keep the sauce separate if you prefer maximum crunch). Refrigerate for up to 24 hours.
