Prepare 40 small shot glasses or verrines (8 of each type). Set them out on a large serving tray.
VERRINE 1 — Cream cheese & cucumber: Peel and finely dice the cucumber. Mix 200g cream cheese with dill, salt, and pepper. Spoon into 8 verrines and top each with cucumber cubes.
VERRINE 2 — Guacamole & cherry tomato: Mash the avocados with lime juice, crushed garlic, salt, and pepper. Halve the cherry tomatoes. Spoon guacamole into 8 verrines and top with a cherry tomato half.
VERRINE 3 — Smoked salmon & cream cheese: Mix 150g cream cheese with capers and a pinch of pepper. Spoon into 8 verrines. Cut smoked salmon into thin strips and arrange on top.
VERRINE 4 — Olive tapenade & ricotta: Season ricotta with salt, pepper, and a drizzle of olive oil. Spoon into 8 verrines. Add a teaspoon of olive tapenade on top and garnish with a basil leaf.
VERRINE 5 — Goat cheese & roasted pepper: Crumble goat cheese and season with thyme, salt, and a drizzle of olive oil. Slice roasted peppers into thin strips. Spoon goat cheese into 8 verrines and top with a strip of roasted pepper.
Refrigerate the assembled tray for at least 15 minutes before serving. Serve cold directly from the verrines.
