Homemade Energy Bars (Dates & Nuts)

No-bake, naturally sweetened with Medjool dates and packed with almonds, cashews, and cacao — these homemade bars deliver sustained fuel for long training sessions. Batch-cook once on Sunday, fuel up all week long.

Ingredients

  • 25 g Medjool dates, pitted
  • 10 g rolled oats
  • 7.5 g raw almonds
  • 5 g raw cashews
  • 3.75 g almond butter (no added sugar)
  • 1.88 g unsweetened cocoa powder
  • 2.5 g desiccated coconut (unsweetened)
  • 0.13 pinch salt

Instructions

    Pit the Medjool dates and place them in a food processor. Pulse for 30–45 seconds until a sticky paste forms.

    Add the rolled oats, almonds, cashews, almond butter, cocoa powder, desiccated coconut, and a pinch of salt. Process for about 1 minute until the mixture clumps together and holds when pressed.

    Line a 20×20 cm (8×8 in) dish with parchment paper. Transfer the mixture and press firmly and evenly to about 2 cm (¾ in) thickness.

    Refrigerate for at least 2 hours (or 30 minutes in the freezer) until firm.

    Remove from the dish and cut into 8 equal bars. Wrap each bar individually in parchment paper.

    Store in the fridge for up to 1 week, or freeze for up to 2 months. Pack one bar in your sports bag before each session.

Diabetes tips

Each bar provides sustained energy from dates and oats during long efforts (>60 min). Unlike commercial gels, the fat and fiber in nuts slow absorption — ideal for continuous training, less so for treating acute hypoglycemia. Use your usual dosing method agreed with your care team for any post-session correction, and log each bar consumed in your journal to track your individual response.
