Greek Chicken Lettuce Wraps

Ingredients

  • 500 g chicken breast
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 8 large lettuce leaves (butter or iceberg)
  • 1 cucumber, diced
  • 150 g cherry tomatoes, halved
  • 80 g feta cheese, crumbled
  • 100 g Greek yogurt
  • 1 tbsp lemon juice

Instructions

    Season chicken with oregano, garlic powder, salt, and pepper.

    Cook chicken in olive oil over medium-high heat, 5–6 minutes per side. Let rest, then slice.

    Mix yogurt with lemon juice, salt, and a pinch of oregano.

    Assemble: place chicken in lettuce leaves, top with cucumber, tomatoes, feta, and yogurt sauce.

Diabetes tips

Very low carb with high protein. Use your usual dosing method agreed with your care team for the carbs, and note that protein and fat may cause a delayed blood sugar rise over 3–4 hours. Log this meal in your journal to track the pattern.
