Express Zucchini & Goat Cheese Soup

A silky, vibrant green soup blended from zucchini, onion, and creamy goat cheese — ready in 15 minutes. Very low in carbs, satisfying enough for a light dinner and easy to dose for insulin.

Ingredients

  • 600 g zucchini (3 medium), sliced
  • 100 g onion, diced
  • 2 garlic cloves
  • 100 g fresh goat cheese (e.g. Chavroux)
  • 60 ml light cream or crème fraîche
  • 500 ml vegetable broth
  • 15 ml olive oil
  • 1 pinch salt, pepper, fresh basil or mint

Instructions

    Heat olive oil in a large saucepan over medium heat. Add diced onion and cook 3 minutes until translucent.

    Add garlic and sliced zucchini. Cook 3 minutes, stirring.

    Pour in broth. Bring to a boil, then simmer 8 minutes until zucchini is very tender.

    Remove from heat. Add goat cheese and cream. Blend until completely smooth with an immersion blender (or stand blender).

    Season with salt and pepper. Serve topped with a thin slice of goat cheese and fresh basil or mint.

Diabetes tips

Carbs come from zucchini and onion (LOW GI vegetables). Use your usual dosing method agreed with your care team. The fat from goat cheese further slows glucose absorption. A reliable low-carb dinner that's easy to dose. Log in your journal to confirm your response.
