Coconut, Dark Chocolate & Seed Energy Bites

No-bake, no-cook energy bites made with rolled oats, almond butter, 85% dark chocolate, shredded coconut, and chia seeds. Perfectly portioned for a pre-workout snack, an afternoon pick-me-up, or a portable lunchbox treat. Batch-cook 15 at once, store all week.

Ingredients

  • 13.33 g rolled oats
  • 5.33 g natural almond butter (or peanut butter)
  • 3.33 g raw honey
  • 4 g dark chocolate 85%, roughly chopped
  • 2.67 g desiccated coconut, unsweetened
  • 1.33 g chia seeds
  • 0.07 tsp vanilla extract
  • 0.07 pinch pinch of salt

Instructions

    In a large bowl, combine rolled oats, desiccated coconut, chia seeds, and salt. Stir to mix.

    Add almond butter, honey, and vanilla. Mix with a spatula or your hands until a sticky, cohesive dough forms. If it's too dry, add 1 teaspoon of water at a time. If too wet, refrigerate for 15 minutes.

    Fold in the chopped dark chocolate.

    Refrigerate the dough for 20 minutes — this makes it much easier to roll.

    Using slightly damp hands, roll into 15 evenly-sized balls (about 30g each). Roll in extra desiccated coconut for coating if desired.

    Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.

Diabetes tips

Moderate glycemic index from the oats. As a pre-workout snack, eat 1–2 bites 30–45 minutes before exercise and adjust your pre-meal bolus accordingly. For a regular snack, use your usual dosing method agreed with your care team and check the nutrition table above — small bites can add up quickly.
