Ingredients

  • 4 slices white bread or brioche, thick slices
  • 2 eggs
  • 100 ml whole milk
  • 15 g butter (for cooking)
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 30 ml maple syrup (topping)

Instructions

  1. 1

Crack the eggs into a shallow bowl or dish. Add the milk, cinnamon, and vanilla extract. Whisk until well combined.

  2. 2

Heat half the butter in a large non-stick frying pan over medium heat until it foams.

  3. 3

Dip 2 bread slices into the egg mixture, letting each side soak for about 10 seconds. Let the excess drip off.

  4. 4

Place the soaked slices in the hot pan and cook for 2–3 minutes per side until golden brown. Transfer to a plate.

  5. 5

Add the remaining butter and repeat with the last 2 slices.

  6. 6

Serve immediately, drizzled with maple syrup.

Diabetes tips

Carbs come mainly from white bread and maple syrup (HIGH GI). Pre-bolus 15–20 minutes before eating and use your usual dosing method agreed with your care team to dose accurately. The butter and egg add fat that may extend the glucose rise — consider a dual-wave or extended bolus if you use a pump, and check your blood sugar at 2 hours post-meal.
