Chocolate Almond Energy Balls (No Added Sugar)

No-bake energy balls packed with almonds, oats, and cacao — naturally sweetened with just two Medjool dates. Ready in 15 minutes, perfect as a pre-workout snack or to keep hunger at bay between meals.

Ingredients

  • 25 g whole almonds
  • 13.33 g rolled oats
  • 3.33 g unsweetened cocoa powder
  • 10 g Medjool dates, pitted
  • 0.17 tbsp almond butter
  • 0.17 tsp vanilla extract
  • 0.17 pinch pinch of salt
  • 3.33 g desiccated coconut for rolling (optional)

Instructions

    Place almonds in a food processor and pulse until finely ground (do not over-process into a paste).

    Add rolled oats, cocoa powder, and salt. Pulse a few times to combine.

    Add the Medjool dates, almond butter, and vanilla extract. Process until the mixture starts to clump together. If it seems too dry, add 1 tsp of water and pulse again.

    Roll the mixture into 12 equal balls (about 28–30g each) between your palms.

    Optional: roll each ball in desiccated coconut.

    Refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to 1 week.

Diabetes tips

Carbs come mainly from oats and dates — use your usual dosing method agreed with your care team to dose accurately. The high fat and fiber from almonds significantly slow glucose absorption, keeping the glycemic impact low despite the dates. Consider a 10–15 min pre-bolus. Log this snack in your journal to track your personal response pattern.
