Bring a large pot of salted water to a boil. Cook chickpea pasta according to package instructions (typically 7-9 min). Reserve ½ cup pasta water before draining.
Meanwhile, halve cherry tomatoes. If desired, toast pine nuts in a dry pan for 2-3 min until golden — watch closely as they burn quickly.
Drain pasta. Return to the pot over low heat. Stir in pesto and 2-3 tbsp reserved pasta water to loosen the sauce.
Add baby spinach and toss until wilted. Add cherry tomatoes.
Divide among plates. Top with parmesan, pine nuts, and a drizzle of olive oil. Season with black pepper and serve immediately.
