Cauliflower Fried Rice

A low-carb twist on a classic. Cauliflower rice stir-fried with vegetables, eggs, and soy sauce — all the flavor, a fraction of the carbs.

Ingredients

  • 1 large head cauliflower, riced
  • 3 eggs
  • 2 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 2 carrots, diced small
  • 80 g green peas (frozen)
  • 3 green onions, sliced
  • 3 tbsp soy sauce (low sodium)

Instructions

    Rice the cauliflower using a food processor or box grater.

    Heat sesame oil in a large pan or wok over high heat.

  3. 3

    Scramble the eggs, then set aside.

    Sauté garlic, ginger, carrots, and peas for 3 minutes.

    Add the cauliflower rice and stir-fry for 5–7 minutes until tender.

    Return the eggs, add soy sauce and green onions. Toss to combine.

Diabetes tips

Very low in carbs, this meal requires a small bolus. Use your usual dosing method agreed with your care team to dose precisely — the protein and fat will slow absorption, so watch for a gradual rise over 2–3 hours.
